Superfood Oat Bars

Contrary to all the food pictures that I blog, tweet, instagram, etc. I generally opt for healthier options during the week so these are one of my go-to things to make whenever I have ripe bananas on hand. They are packed with tons of fiber, antioxidants, and omega 3 fatty acids from the walnuts, chia seeds, almond flour, and hemp hearts. Plus, the cinnamon adds a little metabolism boost! Did I mention that they’re also egg, butter, oil, and sugar-free? Okay that’s kind of a lie, there’s sugar in the dried fruit and shredded coconut but you can omit those if you wish! Check it out:

3-4 ripe bananas, mashed
1C roughly chopped walnuts
1C chopped dried fruit
1/2C chia seeds
1/2C almond flour
1/4C hemp hearts
1/2C shredded coconut
1/2C unsweetened apple sauce
2C quick oats
1/2 tsp nutmeg
1 tsp cinnamon

Mix all the ingredients in a bowl, spread the mixture over a cookie sheet, and bake for 15 minutes at 350F. Let the mixture cool, cut into bars, and store in an air-tight container. For added protein and flavour, spread nut butter over top and enjoy!
